MEXICAN TORTILLA PIE


Mexican tortilla pie
2 teaspoons olive oil
1 large red onion, finely chopped
1 teaspoon YIAH Herb and Garlic Dip Mix
500g beef mince
1 small red capsicum, finely chopped
125g can corn kernels, drained, rinsed
1 - 2 teaspoons YIAH Casa Mexicana Seasoning
415g can diced tomatoes
1/2 cup torn fresh coriander leaves
4 tortillas
1 1/2 cups grated tasty cheese
1 large tomato, deseeded, finely chopped

Preheat oven to 180°C. Heat oil in a frying pan over medium-high heat. Reserve 2 tablespoons onion. Add remaining onion to pan. Cook, stirring, for 3 minutes or until soft. Add mince and YIAH Herb and Garlic Dip Mix. Cook, breaking up mince with a wooden spoon, for 8 minutes or until browned.

Add capsicum, corn (reserve 2 tablespoons of corn) and YIAH Casa Mexicana Seasoning. Cook, stirring, for 3 minutes or until capsicum is just tender. Stir in diced tomatoes. Reduce heat to medium. Simmer, stirring, for 5 minutes or until mixture is thick. Add half the coriander. Season with salt. Stir to combine. Set aside for 10 minutes to cool.

Place a 6cm-deep, 20cm round springform pan on a baking tray. Place 1 tortilla in base of pan. Spread one-third of the mince mixture over tortilla. Sprinkle with 1/3 cup of cheese. Repeat layers twice with remaining tortillas, mince mixture and cheese, finishing with 1 tortilla. Sprinkle with remaining cheese.

Bake for 15 minutes or until cheese is golden. Set aside for 5 minutes before removing from pan.

Meanwhile, combine chopped tomato, reserved onion and corn, and coriander in a bowl. Serve pie with tomato mixture.

Here is just one of our amazing new products being launched in September....

Your Inspiration at Home Mulling Spice

½ cup sugar
2 – 3 tbsp of YIAH Mulling Spice
Red Wine or Apple Juice or Pear Juice or Apple Cider or Pear Cider

Put sugar in a large saucepan over a medium heat, add YIAH Mulling Spice and stir in just enough red wine or juice or cider to cover the sugar. Let this simmer until the sugar has completely dissolved into the red wine or juice or cider  and then bring to the boil. Keep on a rolling boil for about 4 to 5 minutes, or until you've got a thick syrup.   When your syrup is ready turn the heat down and add the rest of the bottle of the red wine or juice or cider. Gently heat the red wine or juice or cider and after around 5 minutes, when it’s warm and delicious, ladle it into glasses and serve. Enjoy!

For everyone that was at YIAH Convention (and anyone who loves Arabic food).....


Arabic Rice and Chicken Pilaf

2 Chicken Breasts, diced
1 onion (or 1 teaspoon or YIAH Roasted Onion Dip Mix)
1 clove garlic (or 1 teaspoon or YIAH Herb and Garlic Dip Mix)
1½ cups arborio rice
¼ cup dried currants
2 teaspoons YIAH Arabic Seasoning
2 tablespoons sliced almonds, toasted
4 cups water
Salt to taste

·         Brown onion
·         Add Chicken and garlic. Cook for approx. 4 minutes
·         Add rice and YIAH Arabic Seasoning
·         Add water and bring to boil
·         Reduce heat to low and cook until rice is tender and most liquid is absorbed, about 20 minutes
·         Sprinkle with almonds before serving

Jamaican Jerk Chicken


Jamaican Jerk Chicken

1 tablespoon Sugar (or brown sugar)
1/4 cup Vegetable oil
2 – 4 Tablespoons YIAH Jamaican Jerk Seasoning (or to taste)
1/4 cup Soy sauce
3/4 cup White Vinegar (or apple cider vinegar)
1/2 cup Orange juice
1 Lime juice
1 hot pepper
3 Green onions (spring onions) -- finely chopped
1 cup Onion -- finely chopped
4 to 6 Chicken Pieces
Lime

Seed and finely chop hot pepper. In a large bowl, combine the YIAH Jamaican Jerk Seasoning and sugar. With a wire whisk, slowly add the vegetable oil, soy sauce, vinegar, orange juice, and lime juice.
Add the hot pepper, onion, and mix well. Add the chicken pieces, cover and marinade for at least 1 hour, longer if possible.
Preheat an outdoor grill.
Remove the pieces from the marinade and grill for 6 minutes on each side or until fully cooked. While grilling, baste with the marinade. Bring the leftover marinade to a boil and serve on the side for dipping. Add lime to squeeze.

Can you think of a better dessert on a cold night?


CHOC ORANGE SELF SAUCING PUDDING

60g Butter
½ cup Milk
1tsp YIAH Vanilla Sugar
¾ cup Caster Sugar
1 cup Self Raising Flour
1 tbsp YIAH Choc Orange Chocolate Powder (+ 1 tbsp extra)
¾ cup Brown Sugar
2 cups Boiling Water
Icing Sugar 

  • Heat oven to 180C, grease 1.5 litre ovenproof dish
  • Melt butter and milk over low heat, remove from heat and stir in vanilla sugar, caster sugar, sifted flour & choc powder
  • Sift brown sugar and extra choc powder over mix, bake 40 minutes or until centre is firm
  • Stand 5 mins before serving - sprinkle with Icing Sugar

My Absolute Favourite Recipe ~



Sri Lankan Spicy Lamb Curry

2 kg Lamb, cut of choice, diced
1 onion, chopped
2 teaspoons YIAH Sri Lanka Coconut Seasoning
I can of light Coconut Milk
Salt to taste

·         Brown Lamb
·         Add onion
·         Add YIAH Sri Lanka Coconut Seasoning
·         Add Coconut Milk
·         Cook on low heat for approximately 2 hours
·         Serve with rice

This is what we had for dinner - it was amazing....



YIAH Bay of Bengal Curry Chicken Pie

Serves 4

Ingredients:

2 chicken breasts coarsely chopped
1 tablespoon of YIAH Bay of Bengal  Curry Dip Mix
1 leek finely sliced, or 1 small onion  finely chopped
1 carrot roughly chopped
150g frozen peas and corn
1 sheet ready rolled puff pastry,  cut into 4 pieces
½ cup white wine (optional)
½ cup chicken stock (or 1 cup if not using wine)
150g button mushrooms, finely chopped
1 tablespoon YIAH Premium Extra Virgin Olive Oil
½ cup sour cream
1 tablespoon plain flour or cornflour (optional)
1 egg, lightly whisked

Method:

Preheat oven to 220°C. Place leek or onion and oil in a frying pan and cook until softened. Add chopped chicken and cook until lightly browned. Add wine and/or chicken stock, carrot and YIAH Bay of Bengal Curry Dip Mix, cover and simmer for 10 minutes. Add mushrooms, peas, corn and cream. Cover and simmer for another 10 minutes, stirring occasionally. Thicken with flour if required.
Spoon the chicken mixture among 4 x 375ml ovenproof dishes. Brush the edges with egg and top each pie with a pastry square. Brush the top of each pie with remaining egg. Place the dishes on a baking tray and bake in oven for 15-20 minutes or until pastry is golden. Serve immediately with chunky fries or a fresh garden salad drizzled with your favourite YIAH Balsamic Vinegar.

Variation:

Instead of serving this dish as a main meal, omit the carrot, peas and corn. Spoon the chicken mixture into pre-baked puff pastry cases and bake for 10 minutes. This is a delicious canapé for any get together with a lovely cold glass of white wine!
