For everyone that was at YIAH Convention (and anyone who loves Arabic food).....

Arabic Rice and Chicken Pilaf

2 Chicken Breasts, diced
1 onion (or 1 teaspoon or YIAH Roasted Onion Dip Mix)
1 clove garlic (or 1 teaspoon or YIAH Herb and Garlic Dip Mix)
1½ cups arborio rice
¼ cup dried currants
2 teaspoons YIAH Arabic Seasoning
2 tablespoons sliced almonds, toasted
4 cups water
Salt to taste

·         Brown onion
·         Add Chicken and garlic. Cook for approx. 4 minutes
·         Add rice and YIAH Arabic Seasoning
·         Add water and bring to boil
·         Reduce heat to low and cook until rice is tender and most liquid is absorbed, about 20 minutes
·         Sprinkle with almonds before serving
