Vegetable Madras Curry
Ingredients:
2 cups pumpkin, roughly chopped
1 onion, finely chopped
1/2 cauliflower, roughly chopped
1 onion, finely chopped
1/2 cauliflower, roughly chopped

zucchini, roughly chopped
1 cup water

Method:
Boil or
microwave potatoes until soft, mash. Add
water and mix to make thick gravy.
Heat oil
in a heavy based pan, YIAH Madras Curry and fry for a few seconds
to release the aroma. Don't brown or burn it.
Add remaining ingredients and cover.
Increase heat a little and simmer for 5 minutes, stirring frequently. Add a little water if mixture is too dry.
Add potato gravy.
Cover and simmer for 10 minutes.
Serve with rice or naan bread.
